Korean Japchae Glass Noodles with Pork

Method

    Soak the glass noodles in boiling water for 6–8 minutes until tender, then drain and snip into shorter lengths with scissors.

    Heat the vegetable oil in a wok over high heat and stir-fry the pork for 3–4 minutes until browned. Remove and set aside.

    Add the carrot and onion to the wok and stir-fry for 2–3 minutes, then add the spinach and wilt for 1 minute. Remove and set aside with the pork.

    Toss the drained noodles in the wok with the soy sauce, sesame oil, sugar and garlic for 1–2 minutes until glossy.

    Taste and adjust the seasoning.

    Return the pork and vegetables to the wok, toss everything together, and scatter with spring onion and sesame seeds.
