
Kenyan-Style Chicken Pilau Rice with Whole Spices
A single portion of Kenyan cooking, ready in 33 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Heat the oil in a saucepan and fry the onion for 5–6 minutes until golden.

Add the garlic, ginger, cumin seeds, cloves, cinnamon and cardamom, and cook for 1 minute until fragrant.

Add the chicken and cook for 4–5 minutes until browned.

Stir in the rice to coat in the spices, then pour in the stock. Bring to the boil, cover, reduce the heat and simmer for 15 minutes until the rice is tender and the liquid absorbed.

Taste and adjust the seasoning.

Fluff with a fork and scatter with coriander to serve.
