Jamaican-Style Chicken Curry with Rice and Peas

Method

    Cook the rice according to the packet instructions, stirring in the kidney beans for the last 5 minutes.

    Fry the onion and garlic in a splash of oil for 3 minutes.

    Stir in the curry powder and fry for 1 minute, then add the chicken and brown for 3–4 minutes.

    Pour in the coconut milk and simmer for 12–15 minutes until the chicken is cooked through and the sauce has thickened.

    Season to taste, then serve with the rice and peas.
