
Jamaican-Style Brown Stew Chicken
A single portion of Jamaican cooking, ready in 39 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Marinate the chicken in the soy sauce, garlic, ginger and allspice for 5 minutes.

Heat the oil and sugar in a pan over medium-high heat until the sugar turns dark amber, then add the chicken and brown well on all sides.

Add the onion, pepper and thyme, and cook for 2–3 minutes.

Pour in the stock, cover and simmer for 20–25 minutes until the chicken is tender and the sauce has thickened.

Season to taste, then scatter with spring onion to serve.
