
Greek Beef Giouvetsi with Orzo
A single portion of Greek cooking, ready in 29 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Heat the olive oil in a saucepan over high heat and sear the beef for 1–2 minutes until browned. Tip onto a plate.

Lower the heat, add the onion and garlic and cook for 3 minutes until softened.

Stir in the chopped tomatoes, cinnamon and stock and bring to a simmer.

Add the orzo and cook for 8–10 minutes, stirring often, until tender and the sauce has thickened. Add a splash of water if it dries out.

Taste and adjust the seasoning.

Return the beef and its juices for 1–2 minutes, then spoon into a bowl and scatter with the cheese and parsley.
