Pork with Gremolata (Milanese Ossobuco-Style)

Method

    Dust the pork in flour and season. Heat the oil in a pan over medium-high heat and brown the pork for 2 minutes each side, then remove.

    Add the onion, carrot and celery to the pan and soften for 4–5 minutes.

    Add the tomatoes, stock and wine and simmer uncovered for 8 minutes. Return the pork, cover and cook gently for 6–8 minutes until just cooked through.

    Meanwhile, mix the garlic, lemon zest and parsley together for the gremolata.

    Scatter the gremolata over the pork just before serving.

Use up the rest

Cooking this for one leaves 25 g parsley, 120 g pork loin steak and ¾ tin of chopped tomato. These recipes finish them off, so plan one later in the same week.
