Baked Feta Pasta

A single portion of Greek cooking, ready in 26 minutes with 6 minutes of prep. Vegetarian, and written for one, so there is nothing to halve.

Method

    Preheat the oven to 200°C (fan 180°C).

    Put the cherry tomatoes and whole garlic cloves in a small baking dish, sit the block of feta in the middle, and drizzle everything with the olive oil and chilli flakes.

    Bake for 20 minutes until the tomatoes have burst and the feta is soft and lightly golden.

    Meanwhile, cook the pasta in salted boiling water according to the packet instructions, then drain, reserving a splash of cooking water.

    Mash the roasted garlic, tomatoes and feta together in the dish to make a sauce, loosening with the pasta water if needed.

    Toss through the pasta and scatter with torn basil.

Cooking this for one leaves 25 g basil and 120 g feta. These recipes finish them off, so plan one later in the same week.
