Greek-Style Baked Cod Plaki with Tomatoes and Olives

Method

    Preheat the oven to 200°C (180°C fan).

    Heat the olive oil in an ovenproof pan and sauté the onion and garlic for 3–4 minutes until soft.

    Stir in the chopped tomatoes, oregano and olives and simmer for 5 minutes.

    Nestle the cod fillet into the sauce and spoon a little sauce over the top.

    Transfer to the oven and bake for 12–15 minutes until the fish flakes easily.

    Taste and adjust the seasoning.

    Squeeze over the lemon juice and scatter with parsley to serve.
