
Ukrainian-Style Varenyky (Potato and Cheese Dumplings)
A single portion of Ukrainian cooking, ready in 35 minutes with 10 minutes of prep. Vegetarian, and written for one, so there is nothing to halve.
Method

Boil the potato in salted water for 12–15 minutes until tender, then drain, mash and leave to cool slightly.

Mix the mashed potato with the curd cheese and a little of the diced onion to make the filling.

Place a spoonful of filling in the centre of each wrapper, dampen the edges with water and fold into a half-moon, pressing to seal.

Bring a pan of water to a gentle boil and cook the dumplings for 3–4 minutes until they float and are cooked through.

Meanwhile melt the butter in a small pan and fry the remaining onion for 4–5 minutes until golden.

Drain the dumplings, toss through the buttery onion, and serve with soured cream and chives.
