Quick Matar Paneer
A single portion of Indian cooking, ready in 20 minutes with 8 minutes of prep. Vegetarian, and written for one, so there is nothing to halve.
Method
- 1
Cook the rice according to the packet instructions.
- 2
Cut the paneer into cubes. Heat half the oil in a frying pan over medium-high heat and fry the paneer for 2–3 minutes, turning, until golden on a couple of sides. Set aside.
- 3
Finely chop the onion and garlic. Heat the remaining oil in the same pan and fry the onion for 3 minutes until soft.
- 4
Add the garlic, ginger, garam masala and turmeric, and cook for 1 minute until fragrant.
- 5
Stir in the chopped tomatoes and simmer for 5 minutes until thickened.
- 6
Taste and adjust the seasoning.
- 7
Add the peas and paneer, and simmer for 2–3 minutes until the peas are cooked through. Serve with the rice.
