
Creamy Garlic Mushroom Tagliatelle
A single portion of Italian cooking, ready in 16 minutes with 6 minutes of prep. Vegetarian, and written for one, so there is nothing to halve.
Method

Cook the tagliatelle in salted boiling water according to the packet instructions.

Slice the mushrooms and finely chop the garlic.

Heat the butter and olive oil in a large frying pan over medium-high heat, add the mushrooms and fry for 4–5 minutes until golden and any liquid has evaporated.

Add the garlic and thyme leaves and cook for 30 seconds until fragrant.

Pour in the cream, bring to a gentle simmer, and stir in the parmesan until melted into a silky sauce.

Drain the pasta, reserving a splash of cooking water, and toss it through the sauce, loosening with the pasta water if needed.
