Pork Meatballs in Tomato Sauce with Spaghetti

Method

    Heat the olive oil in a frying pan over medium heat and fry the meatballs for 5–6 minutes, turning, until browned all over.

    Add the garlic, oregano and chopped tomatoes, and simmer for 8–10 minutes until the meatballs are cooked through and the sauce has thickened.

    Meanwhile, cook the spaghetti in salted boiling water according to the packet instructions, then drain.

    Toss the spaghetti through the sauce, top with grated Parmesan and torn basil.

Cooking this for one leaves 25 g basil and ½ tin of chopped tomato. These recipes finish them off, so plan one later in the same week.
