
New Zealand-Style Pan-Fried Snapper with Kumara Wedges
A single portion of New Zealand cooking, ready in 28 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Preheat the oven to 200C (fan 180C). Toss the kumara wedges in 1 tablespoon of the oil and a pinch of salt, and roast for 20 minutes, turning halfway, until tender and golden.

Pat the fish dry and season both sides.

Heat the remaining oil and the butter in a frying pan over medium-high heat. Fry the fish for 3–4 minutes per side until golden and cooked through, adding the garlic for the last minute.

Squeeze the lemon over the fish and scatter with parsley. Serve with the kumara wedges.
