
Lemon & Herb Cod with Crushed Potatoes
A single portion of British cooking, ready in 21 minutes with 6 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Put the new potatoes in a pan of salted water, bring to the boil and cook for 12–15 minutes until tender.

Meanwhile, pat the cod dry and dust lightly with the flour, seasoning with salt and pepper.

Heat the olive oil in a frying pan over medium-high heat and fry the cod for 3–4 minutes on the first side until golden, then flip and cook for 2–3 minutes more until just cooked through.

Drain the potatoes and return to the pan. Crush lightly with a fork, then stir through the butter, crushed garlic and chopped parsley.

Squeeze lemon juice over the cod and serve on top of the crushed potatoes.
