Korean-Style Spicy Squid Stir-Fry (Ojingeo Bokkeum)

Method

    Mix the gochujang, gochugaru, soy sauce, sesame oil, honey and garlic for the sauce.

    Heat a splash of oil in a hot wok or frying pan and stir-fry the onion, carrot and pepper for 2–3 minutes until just softened.

    Add the squid and stir-fry for 1–2 minutes only, until just opaque (do not overcook or it will turn rubbery).

    Pour in the sauce and toss everything together for 1 minute until glossy.

    Taste and adjust the seasoning.

    Scatter with spring onion and sesame seeds, and serve with rice.
