Method

    Layer the sliced daikon (or potato) in the base of a small pan.

    Mix the soy sauce, gochugaru, gochujang, garlic, ginger, sugar and water together and pour half over the vegetables.

    Lay the mackerel fillet on top, skin-side up, and pour over the remaining sauce.

    Bring to a simmer, cover and cook for 10–12 minutes until the vegetables are tender and the fish is cooked through, spooning sauce over occasionally.

    Season to taste, then scatter with spring onion and serve with rice.
