
Honey Mustard Chicken Traybake
A single portion of British cooking, ready in 31 minutes with 6 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Preheat the oven to 200°C (fan 180°C).

Halve the new potatoes and cut the red onion into wedges. Toss both with half the olive oil on a baking tray and roast for 10 minutes.

Meanwhile, toss the chicken thighs through the honey mustard sauce to coat.

Push the potatoes to one side and add the chicken to the tray, scattering with thyme sprigs.

Taste and adjust the seasoning.

Roast for a further 15–18 minutes until the chicken is cooked through and the potatoes are tender, turning everything halfway.
