Method

    Boil the new potatoes for 12 minutes until tender, then drain.

    Mix the parsley, garlic, vinegar, chilli flakes and a splash of oil into a chimichurri sauce.

    Fry the steak over high heat for 2–3 minutes each side for medium, then rest for 3 minutes.

    Taste and adjust the seasoning.

    Slice the steak and serve with the potatoes and chimichurri spooned over.
