
Argentinian-Style Choripán Sausage Sandwich with Chimichurri
A single portion of Argentinian cooking, ready in 18 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste. It brings some heat.
Method

Finely chop the parsley and garlic and mix with the red wine vinegar, olive oil, oregano and chilli flakes to make a chimichurri. Season to taste.

Butterfly the sausage lengthways and grill or fry over medium heat for 8–10 minutes, turning, until cooked through and charred at the edges.

Split the bread roll and warm briefly in the pan.

Fill the roll with the sausage, spoon over plenty of chimichurri, and top with the sliced red onion.
