
Argentinian-Style Chicken Milanesa with Tomato Salad
A single portion of Argentinian cooking, ready in 19 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Mix the breadcrumbs with the parmesan and oregano on a plate.

Dust the flattened chicken breast in flour, dip in the beaten egg, then coat well in the breadcrumb mixture.

Heat the vegetable oil in a frying pan over medium heat and fry the chicken for 3–4 minutes per side until golden and cooked through.

Toss the sliced tomato and red onion with the olive oil, a squeeze of lemon and seasoning.

Serve the milanesa with the tomato salad alongside.
