Method

    Mix the pork mince with the garlic, shallot, 1 tbsp fish sauce and 1 tsp of the sugar, then shape into small flat patties.

    Heat the oil in a frying pan and cook the patties for 3–4 minutes each side until charred and cooked through.

    Meanwhile, soak the noodles in boiled water for 4–5 minutes until tender, then drain and rinse in cold water.

    Mix the remaining fish sauce and sugar with the rice vinegar, lime juice and a splash of water to make a dipping sauce; stir in the chilli.

    Taste and adjust the seasoning.

    Toss the carrot and cucumber briefly through the dipping sauce, then arrange the noodles, lettuce, herbs and pork patties in a bowl, and spoon over the dressing.

Use up the rest

Cooking this for one leaves 350 g pork mince, ¾ cucumber and ½ lime. These recipes finish them off, so plan one later in the same week.
