
Sweet & Sour Pork
A single portion of Chinese cooking, ready in 18 minutes with 6 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Cook the rice according to the packet instructions.

Cut the pork into bite-sized cubes and toss lightly in the cornflour.

Heat the oil in a wok or frying pan over high heat and fry the pork for 4–5 minutes until browned and cooked through. Remove and set aside.

Add the pepper to the pan and stir-fry for 2 minutes, then add the pineapple chunks and sweet and sour sauce, and simmer for 2 minutes until glossy.

Taste and adjust the seasoning.

Return the pork to the pan, toss to coat, and serve over the rice.
