
Polish-Style Bigos (Hunter's Stew) with Pork and Sausage
A single portion of Polish cooking, ready in 34 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Heat the oil in a pan and brown the pork and sausage for 2–3 minutes, then tip onto a plate.

Add the onion and soften for 2–3 minutes.

Stir in the sauerkraut, cabbage, tomato puree, paprika and bay leaf, then pour in the stock.

Cover and simmer for 18–20 minutes, stirring occasionally, until the cabbage is tender and the stew has thickened.

Taste and adjust the seasoning.

Return the pork and sausage for the last 4–5 minutes until the pork is cooked through. Remove the bay leaf before serving.
