
Spiced Red Lentil Dahl with Flatbread
A single portion of Indian cooking, ready in 23 minutes with 8 minutes of prep. Vegan, and written for one, so there is nothing to halve.

Rinse the red lentils under cold water.

Finely chop the onion and garlic. Heat the oil in a saucepan over medium heat and fry the onion for 3 minutes until soft.

Add the garlic, ginger, turmeric and cumin, and cook for 1 minute until fragrant.

Stir in the lentils, chopped tomatoes and stock, and bring to the boil.

Reduce the heat and simmer for 12–15 minutes, stirring occasionally, until the lentils are soft and the dahl has thickened.

Season to taste and serve with the warmed flatbread.
