Puerto Rican-Style Codfish Fritters (Bacalaitos-Inspired)

Method

    Poach or steam the cod for 4–5 minutes until just cooked, then flake into small pieces.

    Whisk the flour, baking powder, cumin and water together to make a thick batter, and season well.

    Stir the flaked cod, garlic and coriander into the batter.

    Heat a shallow layer of vegetable oil in a frying pan over medium-high heat and spoon in the batter to form 3–4 fritters. Fry for 2–3 minutes per side until golden and crisp.

    Drain briefly on kitchen paper and serve with a squeeze of lime.
