
Pork Chop with Apple & Mustard Sauce
A single portion of French cooking, ready in 17 minutes with 5 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Put the new potatoes in a pan of salted water, bring to the boil and cook for 12–15 minutes until tender.

Meanwhile, season the pork chop and fry in the olive oil over medium-high heat for 4–5 minutes each side until cooked through. Rest on a plate.

Thinly slice the apple and add to the same pan with the butter, frying for 2 minutes until just softened.

Stir in the mustard sauce and simmer for 2–3 minutes until warmed through.

Drain the potatoes and serve alongside the pork chop, spooning the apple and mustard sauce over the top.
