
Pan-Seared Trout with Almonds
A single portion of French cooking, ready in 13 minutes with 5 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Cook the green beans in boiling water for 4–5 minutes until just tender, then drain.

Pat the trout dry and dust lightly with flour, seasoning with salt and pepper.

Melt half the butter in a frying pan over medium-high heat and fry the trout skin-side down for 3–4 minutes, then flip and cook for 1–2 minutes more. Remove to a plate.

Add the remaining butter and the flaked almonds to the pan and toast for 1 minute until golden.

Squeeze in the lemon juice, swirl to combine, and pour over the trout. Serve with the green beans, scattered with chopped parsley.
