Israeli-Style Za'atar Baked Salmon with Tahini

Method

    Preheat the oven to 200C (fan 180C).

    Rub the salmon with the oil and za'atar and place on a tray with the cherry tomatoes.

    Bake for 12–14 minutes until the salmon flakes easily and the tomatoes have softened.

    Meanwhile mix the tahini with the garlic, a squeeze of lemon juice and enough water to loosen to a drizzling consistency.

    Taste and adjust the seasoning.

    Cook the couscous according to the packet instructions and serve alongside the salmon and tomatoes, drizzled with the tahini sauce.
