
Beef Massaman-Style Curry
A single portion of Thai cooking, ready in 20 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste. It brings some heat.
Method

Cook the rice according to the packet instructions.

Dice the potato into small chunks.

Heat a splash of the coconut milk in a saucepan over medium heat, add the curry paste and fry for 1 minute until fragrant.

Add the potato and stir to coat, then pour in the remaining coconut milk.

Simmer for 10–12 minutes until the potato is tender, then add the beef and simmer for 2 minutes until just cooked.

Stir in the fish sauce, taste and adjust seasoning, then serve over the rice scattered with crushed peanuts.
