Method

    Sear the beef in a splash of oil over high heat for 1–2 minutes until browned but still pink inside. Tip onto a plate.

    Add the onion and cook over a medium heat for 4–5 minutes, then pour in the stock and simmer for 5 minutes to reduce a little.

    Stir in the beetroot and warm through for 2 minutes, then return the beef for 1 minute.

    Taste and adjust the seasoning.

    Serve with a dollop of soured cream.
