
Trinidadian-Style Beef Pelau
A single portion of Trinidadian cooking, ready in 34 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Heat the oil in a pot until hot, add the sugar and let it caramelise to a dark brown, 1–2 minutes, watching closely so it doesn't burn.

Add the beef immediately and stir to coat in the caramel for 1–2 minutes. Lift the beef onto a plate.

Add the onion, garlic, thyme and chilli to the pot and cook for 3 minutes.

Stir in the rice, peas and carrot, then pour in the coconut milk and 100ml water.

Taste and adjust the seasoning.

Cover and simmer for 18–20 minutes until the rice is tender, stirring once halfway through. Stir the beef back in for the last 2 minutes.
