Moroccan-Spiced Lamb with Couscous

Method

    Put the couscous in a bowl, pour over the hot stock, cover and leave for 5 minutes until absorbed.

    Finely chop the onion, garlic and dried apricots.

    Heat the olive oil in a frying pan over medium-high heat and fry the onion for 2 minutes until softened.

    Add the lamb mince, breaking it up with a spoon, and fry for 4–5 minutes until browned.

    Stir in the garlic, cumin, cinnamon and apricots, and cook for 2 more minutes.

    Taste and adjust the seasoning.

    Fluff the couscous with a fork and serve the spiced lamb on top, scattered with torn mint leaves.
