
Hungarian Beef Goulash-Style Stew
A single portion of Hungarian cooking, ready in 29 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Sear the beef in a splash of oil in a saucepan over high heat for 1–2 minutes until browned but still pink inside. Tip onto a plate.

Lower the heat to medium, add the red pepper and garlic, and cook for 2 minutes.

Stir in the paprika, then add the potato and stock. Cover and simmer for 12–15 minutes until a knife slides easily into the potato.

Return the beef and its juices and simmer for 1 minute to heat through. Season and serve in a bowl, with bread if you like.
