
Fesenjan-Style Chicken with Pomegranate and Walnut
A single portion of Persian cooking, ready in 30 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Heat the oil in a pan and brown the chicken pieces all over, 4–5 minutes. Remove and set aside.

Soften the onion in the same pan for 4 minutes.

Add the ground walnuts and toast for 1–2 minutes, then stir in the stock, pomegranate molasses and cinnamon.

Return the chicken to the pan, cover and simmer for 15 minutes until cooked through and the sauce is thick and glossy, adding a pinch of sugar to balance if needed.

Cook the rice according to the packet instructions.

Taste and adjust the seasoning.

Serve the chicken and sauce over the rice, scattered with pomegranate seeds.
