Dublin Coddle-Style Sausage & Potato Stew
A single portion of Irish cooking, ready in 38 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Heat a splash of oil in a pan and brown the sausage pieces and bacon for 3–4 minutes.

Layer the potatoes and onion over the meat, pour in the stock, and add the thyme and a good grind of pepper.

Cover and simmer gently for 25–30 minutes until the potatoes are tender and the stock has reduced to a thick gravy.

Taste and adjust the seasoning.

Serve hot straight from the pot with crusty bread.
