Thai Peanut Noodles with Tofu

Method

    Soak the rice noodles in boiled water according to the packet instructions, then drain.

    Pat the tofu dry, then fry in the oil over medium-high heat for 5–6 minutes until golden on all sides.

    Whisk the peanut butter, soy sauce, sriracha, lime juice and a splash of hot water into a smooth sauce.

    Season to taste, then add the noodles and beansprouts to the pan with the tofu, pour over the sauce, and toss for 1–2 minutes until well coated.

Use up the rest

Cooking this for one leaves 270 g beansprouts, 130 g firm tofu and ½ lime. These recipes finish them off, so plan one later in the same week.
