
Singapore-Style Bak Kut Teh (Peppery Pork Rib Soup)
A single portion of Singaporean cooking, ready in 83 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Toast the peppercorns, star anise and cinnamon in a dry pot over medium heat for 1 minute until fragrant.

Add the stock, garlic, pork ribs and both soy sauces.

Bring to a simmer, cover, and cook gently for 60–75 minutes until the pork is very tender, skimming occasionally and topping up with water if needed.

Taste and adjust the seasoning, then scatter with spring onion and coriander to serve.
