
Malaysian-Style Chicken Satay
A single portion of Malaysian cooking, ready in 18 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste. It brings some heat.
Method

Cook the rice according to the packet instructions.

Toss the chicken with the curry powder and a splash of oil, then fry over medium-high heat for 6–7 minutes until cooked through.

Whisk the peanut butter, soy sauce, chilli flakes and a splash of hot water into a smooth sauce.

Taste and adjust the seasoning.

Serve the chicken over the rice, drizzled with the satay sauce.
