Goan Pork Vindaloo with Rice

Method

    Toss the pork with the vindaloo paste and vinegar in a bowl and set aside to marinate while you prep everything else.

    Heat the oil in a pan and fry the onion for 5 minutes until soft, then add the garlic and ginger and cook for 1 minute.

    Stir in the tomato, cumin and 100ml water and simmer for 6–8 minutes until thick.

    Add the pork with its marinade and simmer for 5–6 minutes, stirring, until cooked through. Add a splash of water if it looks dry.

    Meanwhile, cook the rice according to the packet instructions.

    Taste and adjust the seasoning.

    Serve the vindaloo over the rice, scattered with coriander.
